We opened Two Holt's doors to enjoy the sound of the falling rain and I decided to enjoy this lazy day by trying out a new recipe--French Coconut Pie. (Here's the recipe I used and highly recommend...YUM, YUM! http://veryculinary.com/2011/04/28/french-coconut-pie/)
Just before the pies came out of the oven, two lovely ladies appeared at the door. At this point I must confess...I was still wearing my pink flannel pajamas (*blushing*). Come on, you KNOW how comfortable flannel pajamas are and how often do you get the chance to wear flannel PJs on July 4th? Well we opened the door and these two ladies were the friendliest and sweetest visitors we've had in a long time! The lady in the middle is "Dottie" and she's from Charlotte, North Carolina. She reads this blog (I'm shocked to know there's someone who really reads these posts!) and was in Highlands to visit family. She decided to find Two Holt and check it out in person! How cool is that?? Dottie, you made my day!
Yes, this was a quiet holiday, but we enjoyed every second! Happy 4th of July to you and yours from Phil and me at Two Holt!
